Cilantro Butter Tilapia Skillet Fillets

Ingredients
1/4 Tsp Salt 1/4Tsp Ground Cumin1/8 Tsp Ground Red Pepper4 6-oz Tilapia FilletsCooking Spray1 lemon quartered2 Tbsp butter, softened2 Tbsp finely chopped fresh cilantro1/2 tsp grated lemon peel1/4 tsp paprika1/8 tsp salt
Directions
Combine first 3 ingredients and sprinkle over both sides of fish.
Heat a large nonstick skillet over medium heat. Coat the pan and both sides of fish with cooking spray. Place fish in the pan and cook fr 3 minutes on each side, or until flakes easily with a fork.
Place the fish on a serving platter: squeeze the lemon over the fish.
Place butter and remaining ingredients in a small bowl: stir unti well blended. Serve with the fish.

    Instead of the salt, red pepper and paprika I used Old Bay Seasoning, instead of real butter I sprayed some spray butter on each fillet, and I used lime instead of lemon. Turned out really delicious, and was so quick! Served with brown rice and corn on the cob, with lime squeezed over everything. - 3/13/12

    I sub'd yogurt butter for butter and increased the amount of the spices a bit. I also used a spicier paprika for extra zip. Yummy- I've had a hard time finding white fish recipes that I like. I used White Ruffy (Swai) instead of Tilapia since it looked fresher. I don't think that made a difference. - 2/14/10
