Mashed Parsnips with Roasted Garlic

Ingredients
4 Medium to large Parsnips4 large cloves garlic (roasted)1/2 cup evaporated skim milkSalt and Pepper to taste
Directions
Makes about 6 - 1/2 cup servings depending on size of parsnips.

Dice parsnips into large pot and boil until tender. Drain and mash with 4 large cloves of roasted garlic, 1/2 cup milk more or less, and salt and pepper to taste. I use my stick blender to do these right in the pot.
