Single Serving Egg Salad

Ingredients
2 Hard boiled eggs2 hard boiled egg whites2 tbsp hummus1 tsp olive oil2 tbsp balsamic vinegar
Directions
1. Hard boil 4 eggs
2. Peel them and remove two of the yolks
3. Chop up into small bowl or tupperware container
4. Add hummus, oil, and vinegar
6. Chop, mix, and enjoy
7. Serve with fresh veggies or in a sandwich or wrap

    I also added 1/8 tsp. dill weed and a sprinkle of garlic salt and pepper. Hubby and I loved it. I am going to try it in bigger batch with a little tweaking. - 1/30/09
