Colorful Potato Salad

4 medium poatoes (750g)1 c boiling water1/2 tsp salt2 medium tomatoes (250g)1 large cucumber3 hard boiled eggsDressing:4 Tbsp olive oil2 Tbsp vinegar1/4 tsp pepper1/3 c chopped onions1 Tbsp parsley
Wash the potatoes, cover with water and bring to a boil and cook for about 20 minutes until done. Discard hot water, pull off the skin and let cool off.
Cut lukewarm potates into thin slices. Dissolve salt in boiling water and pour over potato slices. Let soak for a few minutes and pour out excess water.
Cut tomatoes, cucumbers and eggs into thin slices.
Dressing:
Combine oil, vinegar, pepper in a bowl and mix well with an egg beater. Add chopped onion and parsley and mix well. Add sliced potatoes, tomatoes, cucumbers, and eggs. Mix and let stand for at least 30 minutes before serving.
