Zesty Orange Muffin-Cakes

1.5 cups whole wheat flour, sifted0.5 cups whole oats2.5 tsps baking powder1/2 tsp ground ginger1/8 cups sugar1/8 cups splenda1 cup nonfat organic milk1/4 cup applesauce1/8 cup oil2 egg whiteszest of one organic orange1 tsp orange extract1/4 cup walnuts, chopped1/4 cup raisins optional glaze: 3 tbls powdered sugar, 1/4 cup orange juice, 1/4 tsp orange extract
Combine first 6 ingredients (dry) in one bowl. In another bowl, combine next 8 ingredients.
Slowly add dry ingredients to wet ingredients. Don't overmix.
Pour into muffin cups. Bake 25 minutes at 350 degrees.
While muffin-cakes are baking, combine powdered sugar, orange juice and orange extract.
Remove muffin-cakes from oven and allow to cool for 5 minutes. Spoon 1 tsp glaze over each muffin-cake.
