Corn Meal Muffins Hodgson Mill

1.5 cups H.Mill Yellow Corn Meal1 cup H.Mill Unbleached White Flour1.5 tsp baking powder1/4 tsp baking soda1/4 cup sugar1/2 tsp salt1 cup buttermilk1 egg1/4 cup canola oil
Makes 12 standard size muffins
Preheat oven to 400 F.
Prepare muffin tin.
Mix dry ingredients in large bowl & set aside.
In another bowl, combine buttermilk, egg & oil.
Pour liquids into dry bowl & mix just until blended. Let sit in the bowl for 5 minutes.
Fill tins 3/4 full.
Bake for 15 minutes until tops of muffins are golden brown.
