Brenda's Chow Mein Noodle Casserole

1 Lb. Ground Beef (or Turkey)1 can Low Fat Cream of Celery Soup1 can Low Fat Cream of Mushroom Soup1 cup (3 stalks) Celery, chopped1 cup (1 medium) onion, chopped1 ½ Cups of Chow Mein Noodles½ cup of Chow Mein Noodles for topping2 Tbsp. Soy SaucePepper, Garlic Powder, Cajun Spices – whatever spice you like to use.
1. Preheat Oven to 375
2. Scramble fry ground beef until browned. Add seasonings, garlic powder, pepper etc. Do not add additional SALT! Drain all fat. Place hamburger on a paper towel and squeeze out any additional fat. Put into a 1 ½ Quart Casserole dish.
3. Add the rest of the ingredients except the ½ cup of Chow Mein noodles. Stir to mix well. Smooth top.
4. Sprinkle the extra ½ cup of Chow Mein Noodles over the top.
5.Bake uncovered for 45 minutes or to the degree of doneness you like celery and onions.
NOTE: Chow Mein Noodles are not the best noodle for being low in fat…try to find a brand that contains little oil and shortening.
