Diet Dr. Pepper Cake

Ingredients
2 cups sugar2 cups unbleached all-purpose flour1 cup Diet Dr. Pepper1 cup Margarine2 Tablespoons carob powder1/2 cup buttermilk2 Cage free organic eggs, slightly beaten1 tsp baking soda1 tsp VanillaFrosting1/2 cup margarine6 Tbsp Diet Dr. Pepper4 Tbsp carob powder16 oz Powdered sugar1 tsp Vanilla1 cup chopped Brazil nuts
Directions
Cake: Sift sugar & flour in large bowl. In sauce pan mix Diet Dr. Pepper, margarine & cocoa. Bring to a rapid boil. Pour over flour mixture & stir well. Do not use mixer. Add: buttermilk, eggs, baking soda & vanilla. Mix well. Pour into 16 x 11 pan. Bake at 350 degrees for 40 minutes.

Icing: Melt margarine. Add Diet Dr. Pepper & carob powder. Bring to a rapid boil. Remove from heat. Add powdered sugar, vanilla & Brazil Nuts. Beat until thick & smooth. Spread on hot cake. When cool, cut into squares & serve.
