Easy Cheesecake

1 cup Grape Nuts1 pint 1% cottage cheese1 small can crushed pineapple, in juice1 large pkg. sugar free lemon gelatin1 cup boiling water3/4 cup Grape Nuts
Dissolve gelatin in boiling water. Mix well. Cool. Combine cottage cheese, pineapple, and gelatin mixture in the food processor and blend until very creamy.
Sprinkle 1/2 cup Grape Nuts in an oblong pan. Pour gelatin mixture over the Grape Nuts and spread to the corners of the pan evenly. Sprinkle remaining Grape Nuts on top. Chill 2 to 3 hours or until firmly set. Cut into pieces and serve with a dollop of calorie controlled whipped topping and a strawberry if desired.
