1 lemon100g couscous25g pine nuts, toasted1 courgette, thinly sliceddill, leaves only, chopped150ml strong veg stock1 haddock fillet or other white fish
pre-heat the oven at 180 degrees Celsius
fold a large sheet of foil in half and fold one side to seal
great the lemon and mix with courgette, couscous, pine nuts and dill
season well and tip into the open "bag"
put lemon juice on stock
lay the haddock on top of couscous, carefully pour over lemony stock
fold the remaining open side and bake for 20-25 minutes
