Tiina's Spanish Rice

Ingredients
2 Tbs olive oil1 cup uncooked long grain white rice1 large onion, chopped3/4 red bell pepper, chopped1 garlic clove, chopped1 can diced tomatoes w/green chiles2 cups fat free low sodium chicken broth1 Tbs chili powder (may cut in half for less spicy rice)
Directions
Heat oil in deep skillet
Saute onion, pepper, and garlic until softened
Add rice, saute until browned
Stir in broth and tomatoes
Season with chili powder
Cover and simmer on low until rice is cooked and liquid absorbed, stirring occasionally, about 30 minutes
Makes 12 1/2 cup servings

    This rice is so perfectly delicious! This was my first time ever making spanish rice from scratch. I was looking for a recipe because all of the pre-packaged were so gross. This is my new stand-by. I will make it many times in the future! Thanks Tiina! - 3/10/09
