Oh-My-Gosh Egg-White Omelet

4 egg whites1 egg yolk2 T Skim milk1 plum tomato, chopped1 small clove garlic, passed through a press1 handful shredded spinach1 T minced purple onionOlive oil-based cooking spray
1. Beat egg whites with the yolk and skim milk.
2. Quick saute the vegetables - just till soft.
3. Pour eggs into a small frying pan coated with cooking spray. Cook till firm. Add vegetables on one half of omelet, then fold other half over top. Let sit for 30 seconds or so, then serve.

This is a new cookbook I got for my birthday. I used frozen spinach and white onions. I would not make it with cooking spray next time. I would use a few tablespoons of smart ones butter so it stay together better next time. I added 1/2 a serving of goat cheese to it and salt and pepper. - 5/25/09
