Mixed Bell Pepper Omelet

1 TB each bell pepper: green, red and yellow2 lg egg whites1 whole egg1/4 c shredded cheddar cheese, reduced fat1/4 tsp Tastefully Simple Onion OnionSalt and pepper to taste
Mix eggs with salt and pepper. Set aside.
Place chopped bell peppers in nonstick skillet, sprinkle Onion Onion on top and sauté for about 2-3 minutes. Remove from heat.
Lightly spray omelet pan with cooking spray. Heat. Pour egg mixer in pan. Cook until almost set, pour in bell peppers on eggs, add cheese, folder over and cook another minute or two more.
