Chicken Parmesan

4 Small Chicken BreastsHalf a LemonGarlic Powder Black PepperWaterVegetable Spaghetti SauceSkim MozzarellaParmesan Cheese, Grated
Makes 4 Servings - 3-4 oz of Chicken Each
(4 small breasts.)
Pre-Heat Oven to 350 F
Line a glass baking dish with foil.
Pour water on top of foil.
Lay the 4 Chicken Breasts side by side on top of foil
Squeeze the Lemon all over the Chicken (pick out seeds).
Evenly sprinkle the garlic powder and pepper over the Chicken (add more of less depending on taste!)
Cover the pan with foil and place in pre-heated oven.
Cook for 30 minutes.
Slice Mozzarella into 4 equal slices.
Measure out the Parmesan Cheese.
Take pan out of oven and take the foil off.
Pour spaghetti sauce evenly over all the chicken.
Put 1 slice of Mozzarella onto each piece of chicken.
Sprinkle the Parmesan cheese equally over all.
Stick it back in the oven, without foil covering, for 20 minutes. Be careful that the cheese doesn't burn! If it's getting too brown, take the pan out and recover it with foil, then finish the 20 minutes cooking time.
Eat with a good salad of peppers and mixed greens! : )
