Healthy Spinach Lasagna

2 T olive oil1 medium red onion, chopped8 garlic cloves, chopped2 small carrots, chopped1 medium zucchini, chopped8 oz portobello mushrooms (OR 1 orange bell pepper), chopped12 oz fresh spinach, chopped2 tsp parsley1 tsp basil1 tsp thyme1 tsp oregano1 tsp salt1/4 tsp pepper1 package (349 g) firm silken tofu1 jar (3 c) pasta sauce9 lasagna noodles
Heat the oil in a large skillet. Add the onion and saute just until it softens.
Add the garlic, carrots, zucchini, and mushrooms (or pepper) and saute for 2 minutes.
Add the spinach, herbs, salt, and pepper and stir until the spinach is wilted.
Crumble the tofu into the skillet. Add the pasta sauce and bring the mixture to a boil.
In a 2 L baking dish, spread a layer of sauce, then a layer of dry noodles, until ending with a layer of sauce.
Cover with aluminum foil and bake at 375 for 50-60 minutes.
