Potato Flake Fried Chicken

1.5 lb. boneless, skinless chicken thighs1 packet instant mashed potato flakesseasoningsbutter spray, like Parkay
Pre-heat oven to 400 degrees Farenheit.
Line baking sheet with foil and spray with cooking spray.
Take potato flakes, place in large bowl. Add whatever seasonings you'd like.
Take each chicken thigh, spray each side with butter spray, then dredge through seasoned potato flakes. Make sure to coat thoroughly.
Place flaked thighs on baking sheet. Sprinkle remaining flakes as desired over thighs. Spray tops with cooking spray.
Bake for about 20 minutes or until cooked through.

I served this w/ sauteed onions & red & green peppers. I seasoned it w/ generous amounts of salt, pepper, onion & garlic powder, & dried parsley. My preschooler & toddler loved it! My 2-yr-old even had seconds! Delicious! Beware of adding too much salt b/c the potato flakes are pre-salted. Thanks! - 3/24/09

I used chicken breasts, boneless,skinless. Served steamed fresh asparagus and Nepalese black eyed peas and potatoes and for dessert we had lemon poppyseed bread. presentation excellent! Rave notices - 2/21/09

I tried this yesterday - used some thin chicken breasts and some thicker store packaged breasts for my husband . Figured breasts would be better for us. The thicker breasts were dry so I will use either the thighs mentioned in the recipe or the thinner prepackaged breasts in the future. Was good. - 2/10/09

We tried this recipe last night. The flavor was good but it needed something a little different. I don't know if we put too much of the flakes on but it tastes like we were eating a mouthful of dry flakes. I think the recipe could use something as a sauce to moisten the flakes more. - 2/18/09
