Potato Flake Fried Chicken

Ingredients
1.5 lb. boneless, skinless chicken thighs1 packet instant mashed potato flakesseasoningsbutter spray, like Parkay
Directions
Pre-heat oven to 400 degrees Farenheit.

Line baking sheet with foil and spray with cooking spray.

Take potato flakes, place in large bowl. Add whatever seasonings you'd like.

Take each chicken thigh, spray each side with butter spray, then dredge through seasoned potato flakes. Make sure to coat thoroughly.

Place flaked thighs on baking sheet. Sprinkle remaining flakes as desired over thighs. Spray tops with cooking spray.

Bake for about 20 minutes or until cooked through.

    This recipe was really good!Instead of butter I used Fat Free nonstick cooking spray when I coated the chicken and chicken breasts. I would have never thought to use it on chicken to give it that crispy effect.Thanks I will definitely use this recipe again! - 2/3/09

    Very easy! Satisfied that need for crunchy food also! Hint: Spray the tops of the chicken with veggie spray and turn them 1/2 way through cooking. You will get a nice crisp on both sides. - 2/9/09

    I served this w/ sauteed onions & red & green peppers. I seasoned it w/ generous amounts of salt, pepper, onion & garlic powder, & dried parsley. My preschooler & toddler loved it! My 2-yr-old even had seconds! Delicious! Beware of adding too much salt b/c the potato flakes are pre-salted. Thanks! - 3/24/09

    I tried this yesterday - used some thin chicken breasts and some thicker store packaged breasts for my husband . Figured breasts would be better for us. The thicker breasts were dry so I will use either the thighs mentioned in the recipe or the thinner prepackaged breasts in the future. Was good. - 2/10/09

    We tried this recipe last night. The flavor was good but it needed something a little different. I don't know if we put too much of the flakes on but it tastes like we were eating a mouthful of dry flakes. I think the recipe could use something as a sauce to moisten the flakes more. - 2/18/09

    Wonderful! I used boneless breasts instead and baked at 375 for 45 minutes. I used roasted garlic & parmesan potato flakes and melted ICBINB instead of the spray. My 7 year old son just said "This is some good chicken, I feel like I am in heaven". Will make again! - 11/6/09

    I was so disappointed in this recipe! The worst problem was that while the top was crispy, the bottom was mushy like mashed potatoes. If you are going to make it, make sure to turn the chicken. I also just found it really bland. Sorry :( Would not make again. - 6/30/11
