Chicken & Sun Dried Tomato Alfredo

1 3/4 Cup Skim Milk1 3/4 Cup 1% Cottage Cheese1 Cup Shredded Parmesan Cheese1/4 Cup Flour2 Tbsp Minced Onion1 Tsp Garlic Powder1/2 Tsp Pepper2 Tsp Dried Parsley6 Slices Of Sun Dried Tomatoes2 Cups Fresh Mushrooms (8oz package)1 1/2 lbs Chicken Breast, Cut Into Bite Sized Pieces
~Reconstitute tomatoes by soaking in water for 30 minutes. Separate in half to make two piles of 3. Dice each pile and set aside.
~In blender or food processor mix milk, cottage cheese, parmesan cheese, spices and one pile of sun dried tomatoes.
~Cook chicken in skillet until done adding mushrooms about half way through.
~Pour blended mixture into chicken and stir well.
~Stir in 2nd pile of sun dried tomatoes.
~Cook until well blended and heated through.
*Serve over your favorite noodles.
*Makes about 6, one cup servings.
