Spanish Rice

Ingredients
1 Cup Long Grain Brown Rice (uncooked)1/4 cup Olive Oil1 10 oz can of Rotel4 tsp of Fiesta Spanish Rice Seasonings
Directions
Heat the oil in a pan that has a tight fitting lid. Ad the rice and fry it until it starts to turn brown. Add the rotel, seasoning and 2.5 cups of water and bring to a boil. Cover and let simmer 15-20 minutes until the liquid is absorbed. Do not overcook. Fluff and serve.
