Whole Wheat Chapatis (Rotis)

Ingredients
1 cup atta or regular whole wheat flour.3 tsp of salt (or season to taste).5 tsp cayenne (optional).5 to 1 cup water
Directions
- Sift together the dry ingredients.
- Add enough water to make a non-sticky, but still soft ball of dough.
- Work the dough for a few minutes, then let it rest, covered, for at least 10 minutes.
- Heat a skillet over medium heat
- Divide the dough into six small balls
- Roll out a ball to a 6-inch diameter, dusting with flour as you go, in order to prevent sticking
- Cook the chapati on moderate heat for one minute, then flip over, and, press down gently all over the surface with a wadded paper towel - this will cause the chapati to puff up gently. (Watch out, if it leaks, that steam can be pretty darned hot!)

Serve hot, or keep warm, covered with a slightly damp cloth.

Can be refrigerated or frozen - to reheat, sprinkle a few drops of water over the chapati and microwave on low power for 15 seconds.
