Meatloaf with RoTel

1 pound lean ground beef1 medium onion, chopped1/4 cup ketchup5 multi-grain saltine crackers, crushed1 large egg1 package Knorr Spring Vegetable Recipe Mix1 can RoTel diced tomatoes and green chilies
Preheat oven to 350 degrees.
Spray a 9-inch X 5-inch loaf pan with Pam.
Mix ground beef, onion, ketchup, crackers, egg, and Knorr soup mix together. Shape mixture into a loaf size and put into the prepared loaf pan.
Bake for about 25 minutes, or until the meatloaf is slightly browned.
Pour the RoTel over the meatloaf and continue cooking for 20 to 25 minutes more.
Makes six (1 1/2-inch slice) servings.
