Vegetarian Quiche on Whole Wheat Crust

1 Whole Wheat Tortilla1 Cup egg substitute3 XL eggs1 cup milk1 tsp butter1 cup fresh mushrooms diced1 cup diced red pepper1 tblsp diced garlic1/2 c. diced onion1 tsp salt1/4 tsp black pepper1/4 tsp chili pepper1/2 tsp dried parsley1 cup cheddar cheese
Place the tortilla in an 8 or 9 inch pie dish.
Melt the butter in a fry pan and add the onions, garlic, mushrooms, peppers and cook until all are softened. Place the cooked vegetables into the bottom of the pie dish, on top of the tortilla. Layer the cheese on top of the vegetables.
Mix the egg substitute, eggs, milk, salt pepper, chili pepper and parsley in carefully pour over the vegetables and cheese in the pie dish.
Bake at 350 degrees for 30 minutes, until it is a light golden brown and a knife poked into the middle comes out clean.
If you like the larger serving, I cut this in 4 pieces for a full meal. Each quarter of the pie is 282.7 Calories.
