Low Fat Oatmeal/Flax Muffins

Ingredients
1.5 cups quick cooking Oats1 cup whole wheat flour1/2 cup (7 tbsp) ground flax meal1 tsp baking powder1/2 tsp baking soda1/2 tsp salt1 tbsp ground cinnamon1/2 tsp nutmeg1/2 unpacked brown sugar1 large egg1/2 cup unsweetened applesauce1 cup non-fat milk1 cup blackberries (fresh or unsweetened frozen) (or raspberries or blueberries)
Directions
Preheat oven to 375
Mix together dry ingredients

Beat egg into brown sugar, add applesauce and milk.

Stir dry ingredients into wet ingredients until oats are wet. Add berries.

Spoon into muffin tin (12) and bake at 375 for 30-35 minutes or until inside cooked.

    Great recipe. Super yummy, super easy and super healthy. I was a little short of flax so substituted with hemp seeds. Also used agave syrup instead of the brown sugar. - 2/9/10
