Onions, raw, 3 smallOlive Oil, 1 tbspNo Name Tomato Paste, 4 tbspPatak's Tikka Curry, 4 tbsp Chicken Broth, 2 cup (8 fl oz)Garlic PowderCuminMarsalaOnion PowderCauliflower, raw, 1 head, medium (5-6" dia) Red Potato, 600 grams (about 5-6 small)Canned Chickpeas, 2 cup (1 19 oz can)Butter, salted, .5 cup
Makes 12, 1 cup servings.
In a medium sized frying pan fry Onions in Olive Oil until soft, add Tomato Paste and Patak's Tikka Curry paste add Chicken Broth
Add Garlic Powder, Marsala, Cumin Onion Powder too taste
Cut Cauliflower,and Red Potato into medium sized pieces, put in oiled roasting pan, add Canned Chickpeas. Mix.
Add onion curry mixture.
Put in 350 degree oven for at least an hour (turn down to about 200 after that) Before serving add butter.
Serve with Nan and Yogurt.
Add an already roasted chicken and you have an easy meal.
