Ingredients
5 tablespoons of buckwheat flour1 egg1/3 cup non fat milk 1 teaspoon olive oil to coat the frying pan
Directions
wisk egg, salt, flour and milk together let stand for 10 min then heat pan - on high heat - { coating it first with the olive oil } and wisk again and pour half in pan to coat all the bottom of at least 10 to 12 inch pan...when it's bubbled evenly throughout turn over and wait until golden... serves two crepes... can be used for breakfast or wrap for tuna salad...etc.

    I just made these for dinner. They are superbe. I added 1/3 of a cup of water and got 3 thin 10 inch crepes that I enjoyed with ligth ricotta, honey and slivered almonds. Yummy! Will use this recipe again for savory concotions as well. Thanks for the recipe! - 10/24/09
