Broccoli Leek and Zucchini Soup

V small knob of butter (1/2 oz - 12 gms)2 cleaned sliced leeks2 zucchini (courgettes in Europe) slicedI head broccoli choppedI cup chicken stock or vegetable stock(8 fl oz)24 fluid oz waterBlack pepper
Melt butter gently in pan, add sliced leeks, cover turn heat low and sweat for 5 mins. Add chopped broccoli and zucchini, cover sweat another 5 mins. Add stock and water (use vegetable stock for vegetarian option), bring to boil, simmer for 15 mins. Blend until smooth. Grinding black pepper. Gently reheat.
