Swiss Steak Supper (crockpot recipe)

Ingredients
1 1/2 lbs round steaksalt & pepper to taste1 TBS olive oil6 med potatoes1 1/2 cups baby carrots1 med onion, sliced1 (14 1/2 oz) Italian diced tomatoes1 (12 oz) jar home-style beef gravy1 TBS minced fresh parsley
Directions
Cut steak into serving-size pieces; flatten to 1/4 in thickness. Rub with salt and pepper. Brown in oil. In crockpot, layer the potatoes, carrots, beef and onions ( in that order). Combine tomatoes and gravy and pour over top. Cook on low six hours. Sprinkle with parsley before serving.
