Ingredients
2lb eggplant.25 cup lemon juice.25 cup olive oil4 tblsp tahini1 sm onion1/4 cup sesame seeds2-3 cloves garlic, crushed1tsp salt1 tsp pepper
Directions
Cook eggplant until soft (roast, grill, or microwave).
Let cool and then peel the skin off.

While eggplant is cooling, mix all other ingredients in blender/processor and blend well into a paste.

Add eggplant and process till smooth.

Refrigerate for at least 2 hours before eating with pita.
