Jette's Beautiful Wine Chicken

Ingredients
1.5 Tbcp. Olive oil1.5 Tbsp. Butter1 4 lb. roasting chicken, cut up.5 tsp. dried rosemary, crumbled3 bay leavesSalt & pepper, to taste.5 cups dry white wine (I prefer a Pinot Grigio)2 cloves garlic, crushed1/3 c. parsley, minced
Directions
Heat oil and butter in heavy skillet over low heat until bubbly. Add chicken, rosemary and bay leaves, saute about 25 minutes or until chicken is golden. Season generously with salt & pepper. Add 1/4 cup white wine and garlic. Cover and simmer about 20 minutes or until chicken is tender. Uncover and sprinkle parsely. Simmer uncovered, turning chicken until liquid evaporates to a syrupy glaze. Remove chicken to warm plate. Add remaining 1/4 cup wine to pan and stir over high heat to loosen and blend drippings. Reduce heat and discard bay leaves. Pour sauce over chicken, Makes 4 servings.

    Cooked onions and celery then added chopped chicken breasts and sauteed.... added wine to simmer. We used dry wine but a sweeter wine probably even better... nice on rice. - 2/14/09
