Oatmeal Muffins

Ingredients
1 C.oats1 C. 2% Milk1 C. White flour1/2 C. Brown Sugar1/2 C. Apple sauce2 Eggs1 tsp. Baking Powder1/2 tsp Baking Soda2 tsp. Cinamon1tsp. Nutmeg1/4 tsp Ginger1/2 tsp Salt
Directions
Pre-heat oven to 400*
Coat the muffin pan
Do not use papers, muffins will stick to the paper.
Combine the oats,flour,sugar,Baking powder,Baking Soda,Salt , Cinamon, Nutmeg,and Ginger in One large bowl.
Mix the rest of the ingredients in a medium sized bowl. Then mix together untill just mixed. As with most muffin recipes over mixing makes them rubbery! Bake for 20-23 minutes. Makes 12

    I added 1/4 cup whole wheat flour because the batter seemed runny. Really good! Kids said they smelled like pumpkin pie. They ate them up quickly! Dried fruit would be nice addition! - 8/12/09
