Swiss Chard with Bacon and Walnuts

Ingredients
2 slices of low-sodium bacon, chopped1 bunch Swiss Chard, stems chopped and leaves torn2 tsp fresh thyme1 onion, chopped1 clove garlic, minced1 tbsp lemon juice8 walnuts, roughly chopped and toasted
Directions
In a pot large enough to hold all the chard, fry the bacon until crisp, then remove to a paper towel with a slotted spoon. Add chard stems, thyme, onion and garlic to the bacon fat and fry, stirring often, until onion and stems are soft. Add torn greens and lemon juice to the pot and stir often while greens begin to wilt, 2 or 3 minutes. If the greens start to dry, add a few tbsp water. Put the lid on the pot for a minute or two with the heat on medium just to make sure the leaves are fully wilted. Toss with walnuts & reserved bacon and season with pepper and serve. Makes 6 servings.

    I made this for dindin to go with my main course. It needed a little umph so I added some Balsamic vinegar. Will make this again but maybe with beet greens or spinach. - 10/19/20

    I didn't have the Thyme but I looked online and they suggested oregano. So I used that and lemon infused olive oil instead of the bacon grease. Normally I have 30% less fat and low sodium bacon bits on hand so I used that for a topping. This was my first time cooking Swiss Chard. Wonderful!!

    Just had this tonight... delicious and love the contrast of the crunchiness of the bacon and walnuts with the wilted chard. Wasn't sure if the "8 walnuts" were whole or halves so did halves - next time I'll double it! - 3/23/09
