Pork Pepper Tomato Simmer

Ingredients
Pork Tenderloin (trimmed) - 16 ouncesCanned tomatoes (peeled/diced/crushed): 1 28 ounce canMedium Bell Peppers (Green/Red/Orange/Yellow): 2 mediumOnion: 1 mediumMushrooms: 6 medium Garlic Powder: 1 tbspOnion Powder: 1/2 tbspSweet Basil: 1 tbspOregano: 1/2 tbspBay Leaves: 2 tbsp crumpledOlive Oil: 1 tbsp
Directions
Empty canned tomatoes into large covered pot and add seasonings (adjust to taste). Start cooking over low/medium heat.

Slice up peppers, onion, and mushrooms. Add to large pan over medium/high heat and stir fry until cooked. Add this to large pot with tomato and seasonings. Lower heat on pot to simmer.

Dice pork tenderloin into small (1/2 to 1 inch) cubes. Optionally season with some garlic powder. Add to large pan over medium/high heat with 1/2 tbsp of olive oil. Stir fry until fully cooked. Add to large pot.

Simmer at least 20 minutes or as long as you would like.

Makes four servings with 4 ounces of pork each. Can be eaten in a bowl as a stew (my preference) or used as a topping for pasta or rice.
