Ingredients
1 1/2 cups split red lentils2 tbsp. olive oil1 onion, chopped3 cloves garlic, minced6 cups water1 cup frozen country style hash browns1 cup frozen spinach1 tsp. salt2 tbsp. lemon juice2 tbsp. yellow curry powder
Directions
Saute onion and garlic in olive oil in a large pot. Add lentils and water. Bring to a boil, then cover and reduce heat. Simmer 30 minutes or so - until lentils start to dissolve - stirring occasionally. Add potatoes, spinach, salt, lemon juice and curry powder and simmer at least another 10 minutes.

Serve with a dollop of plain, low-fat yogurt and minced cilantro for a garnish

Makes about 6 1-cup servings.
