Ingredients
1 pound walnut or pecan halves (or a mix), shelled 1 egg white1 tsp. cold water1/4 c. granulated sugar (white or raw works equally well)1/2 tsp. salt1/2 tsp. spice (cinnamon, paprika, allspice, ginger, your preference really--experiment!)
Directions
Preheat oven to 225 degrees F.

In a small mixing bowl, beat egg white and water till totally incorporated. Stir nuts in gently (use a rubber spatula), mixing till thoroughly coated with egg mixture.

Mix sugar, salt and spice in a small bowl till evenly combined. Pour over nuts and stir (gently!) till well coated.

Spread nuts in a single layer on parchment lined baking sheet. Bake at 225 deg. F for 45 minutes, stirring a couple times throughout. Raise oven temp to 275 deg. F. Stir nuts again and roast an additional 15 minutes.

Let cool completely before storing (they will be slightly gooey when you take them out of the oven, but they crsip up as they dry).

I make this with Splenda instead of sugar for my diabetic dad. Very good. - 3/30/11

I used mixed nuts as well and have tried different mixes of spices. My current favorite is ginger and cinnamon. - 5/16/13

This was perfect. I have made these on the stove top several times with hit and miss results. These came out perfect and tasted better than any other times that I have made them. - 2/18/13

These are good, I changed and used 1 tsp of vanilla instead of the water and used cinnamon for my spice. I roasted mine about 1 hour stirring every 15 min with good results. Thanks for the recipe. - 12/27/12
