Applesauce Oat Bran Muffins

Ingredients
1/2 cup Brown Sugar Twin1-1/2 cups Hodgson Mill Oat Bran Cereal1-1/2 cups Unbleached, White Flour1-1/2 tsp. Baking Powder1-1/2 tsp. Baking Soda1/4 tsp. Salt4 Egg Whites1 cup Applesauce, unsweetened4 Tbs. vegetable oil
Directions
Preheat oven to 350 degrees.F Spray muffin pan. Blend together dry ingredients. Add eggs, applesauce and oil. Mix until well blended. Spoon batter into muffin cups. Let stand 10 minutes. Bake 15 minutes or until golden.

    I made this today with some changes. I substituted Splenda for the sugar, used whole wheat flour, added 1/4 teaspoon of cinnamone, and added a cup of blueberries. They're quite good. :) - 2/24/11
