Granola Bran Muffins

Ingredients
1 c. whole bran cereal (Kellogg’s All Bran)2 c. granola (Quaker 100% with dates and raisins)1 c. boiling water1/2 c. vegetable oil4 eggs beaten1 c. buttermilk (1 tsp. lemon juice to 1 c. milk)2 1/4 tsp. soda1 t. salt1 1/2 c. sugar2 1/2 c. flour
Directions
Pour boiling water over Bran and let stand. Mix sugar
and oil well in big bowl, then beat in eggs and buttermilk,
add wet bran and remaining ingredients. Batter can be
frozen! Will keep in fridge for 6 weeks. Bake 400 degrees
15-20 min.

    Only made a few changes. Used mostly applesauce and topped it up with a bit of oil. Too wet so added .5 cup wheat bran. Used .75 cup brown sugar and turbinado mix. Added raisins and dried organic apricots and put a walnut on top. Husband loves it. - 5/29/11
