Slow Cooker Country Captain Chicken w/ Rice

Ingredients
2 C shiitake mushrooms, sliced1 C onions, chopped1/2 C celery, chopped1 med. garlic clove, minced1 lb. skinless, boneless chicken thighs, cut into bite-size pieces1TBS all purpose flour1/4 C fat free chicken broth1 1/2 tsp curry powder1 tsp salt1/4 tsp pepper1/4 tsp paprika3 C canned crushed tomatoes1/4 C golden seedless raisins2 C cooked brown rice
Directions
Coat a lg. skillet w/ cooking spray. Add mushrooms, onion, celery and garlic & saute until vegetables are tender, about 5 minutes. Place vegetables in slow cooker, add chicken. In a cup, stir together flour & chicken broth until smooth. Add to slow cooker. Add curry powder, salt, pepper, paprika, crushed tomatoes & raisins, and stir together. Cover & cook on Low for 5 hours. To serve, spoon 1/2 C rice onto each of 4 plates. Top each with chicken (~2/3 C each) and sauce and serve.
