Mushroom sandwich

1 Tbsp. light margarine1 Tbsp. minced garlic3/4 cup chopped onion16 oz. mushroomssaltpepper1/4 cup balsamic vinegar or red winethree 3/4 oz (or two 1 oz) slices American or Swiss cheese
Cook onions and garlic in margarine until onions are soft. Add mushrooms and salt and pepper to taste. Cook until they give off their liquid. Add balsamic vinegar. Cook until very little liquid is left. Melt American cheese and stir into mushrooms. Serve on whole wheat tortilla/wrap or toasted bread. Makes 3 generous helpings, or 4 smaller ones. Can also be used as a side dish or as a topping for steak.

This was absolutely delish! Instead of the American cheese, I used 1 ounce grated swiss melted in to the mix. I served it on a whole wheat pita stuffed with a cup of spinach. I also used Nakanos Roasted garlic rice vinegar instead of the balsamic vinegar. Rave reviews from hubby and oldest son - 8/14/10
