Chicken Basil Pesto Panini

French Bread Sliced for Sandwiches Sliced Deli Oven Roasted Chicken Breast Basil Pesto Sauce I Can't Believe It's Not Butter Sliced Mozzarella Cheese Pinch of Salt (Optional)
Pick out 2 slices of French bread.
On one side of each piece spread I Can't Believe It's Not Butter.
On the other side of one of the pieces of bread spread a thin layer of basil pesto sauce. Add a pinch of salt over the basil pesto sauce on the bread.
On the basil pesto sauce place a few slices of oven roasted chicken breast and a slice of mozzarella cheese.
Assemble the sandwich so that each of the buttered sides faces outward.
Brown each side in a skillet until the cheese is melted. Enjoy!

I didn't use the butter. Instead I used cooking spray. I used 35 calorie bread instead of the French bread, and I used thinly sliced deli chicken. I added mushrooms, and it was delicious! My changes made this about 200 calories instead of 369. My version didn't make me miss anything. - 3/11/16
