Ingredients

I large onionI medium potato5 medium fresh eggs beaten1/2 cup frozen peas1/2 cup chopped mushrooms2 cloves garlicteaspoon mixed dried herbs
Dice onion and potato and microwave on high for 4 minutes.
Add peas chopped garlic and mushroom and microwave for a further 2 minutes.
Heat oil in frying pan and add vegetables.
Stir for 2 minutes. Mix eggs with herbs and add to vegetables. Season with salt and pepper to taste
Mix well and continue to cook for 3 minutes. Remove from stove and place under a grill until golden brown.
Eat hot or leave to cool.
