Chicken Cacciatore with Portabella Mushroom

Ingredients
1 tbs. olive oil1 clove garlic1.5-1.7 pounds boneless, skinless chicken breast, sliced into 2" strips (pound the chicken if you want)1 cup onion (chopped)1 28oz can tomato puree1 cup chopped tomato1 cup chopped green pepper1 cup chopped red pepper1 cup chopped parsley2 portabella mushrooms1 cup beef broth or beef stock
Directions
Prepare beef broth
Wash portabella mushrooms. Soak in beef stock

Heat olive oil
Add garlic
Add onion and chicken. Stir fry until chicken is cooked through
Add tomato puree, red pepper, green pepper, and tomato.

While heating, slice portabella mushrooms.

Add portabella mushrooms and beef stock to chicken mixture. Heat through.

Serve over 1/2 cup wide egg noodles.

Makes 6-8 1 cup servings

    We made this recipe using mushrooms other than portabella. We also added a little italian seasoning and some fresh jalapeno's out of our garden. It is a good recipe, freezes well too. Good receipe, we will make this again. - 10/16/11
