1 cup sweet red peppers sliced1 cup bean sprouts1 cup coarsley chopped onions1 cup small brocoli flowerettes1 cup thin sliced carrots1 cup cleaned fresh snow peas1 cup sweet yellow peppers sliced1 fresh boneless skinless chicken breast cubed1 cup sliced yellow squash1 cup sliced zucchini6 tbsp vegetable oil
heat non stick skillet and add oil.add diced chicken and cook well done.remove chicken from skillet when done and place on paper towel to help soak any oiladd 3 tbsp oil to skilletadd carrots, brocoli, onions and cook over medium heat for two minutesadd sweet red and yellow peppers, snow peas, bean spouts, yellow squash and zucini to carrots bocoli and onions and cook all ingedients approximately 3 to 5 minutes until all are crunchy tender add cooked chicken and serve at once with your favorite seasonings (salt, pepper and lite soy sauce if desired)
