Foil-Pack Chicken Taco Dinner

4 boneless skinless chicken breasts8 tsp taco seasoning mix4 cups thinly sliced peeled potatoes2 cup Tex Mex Shredded Cheese1 cup salsa1/2 cup sour cream
Cut chicken breasts in half lengthwise.
Pre-heat oven to 400, Coat chicken with seasoning mix. Layer 1/4 each of the potatoes, chicken, cheese and salsa in the center of a piece of tin foil.
Bring up foil sides and double fold the top and ends of packet leaving room for heat to circulate inside. Place in a single layer on a cookie sheet.
Bake 15 min or until chiken is cooked through and potatoes are tender. Remove from oven. Let stand 5 min. Top with 1 tbsp of sour cream.
