2 Skinless Chicken Breast diced into small pieces1/2c Raw broccoli florets1/4c diced of Red, Yellow and Orange Peppers each3 cloves (sliced) Garlic, 21 1/2 tsp Dried Crushed Red Pepper Flakes1/4c sliced Onions1/4c chopped Scallions2 1/2tbsp Plum Sauce1/2c Water1c Sliced Mushrooms 2c Rice Noodles
This serves two health portion for 2 or it can be divided to serve 4. First, chopped all vegetables and set aside. Next, dice the chicken breast into bite size pieces, Saute chicken in olive oil. Toss in chopped vegetables. Sprinkle in red pepper flakes. Add water to deglaze pan. Add plum sauce. Prepare rice noodles according to the package. Stir into the vegetable chicken mixture. Most of the liquid will absorb into the noodles. More water maybe added. Finally, if necessary, you may add a dash of soy sauce.
