Best Spinach Salad Ever!

Ingredients
Directions
1 package fresh baby spinach3 hard boiled eggs3 tablespoons Splenda3 tablespoons apple cider vinegar1.5 tablespoon yellow mustard1 cup fresh sliced mushrooms
Boil eggs. When cooled, put spinach leaves in large salad bowl. Divide eggs in half. Put all of yolks in separate, small bowl. "Mash" with the tines of a fork. Add Splenda, vinegar and yellow mustard. Mix well, and set aside.
Chop egg yolks. Sprinkle on top of spinach. Add mushrooms, and any other fresh ingredients (especially some slivered almonds). Adjust to your taste.
Add vinegar mixture as dressing over spinach. Toss well and serve immediately! Enjoy this wonderful recipe as often as possible!!!

I don't understand how you can put "all of yolks" in a separate bowl, mash them, and add other ingredients then "chop egg yolks" and sprinkle over spinach. Could the 2nd egg yolk step be a slip that really means egg whites? - 12/26/10

No, because the egg yolk is part of the "dressing" when combined with only the mustard, vinegar, and sugar. Then, set that aside while you prepare the salad. Does that help?

I replaced 1T of the apple cider vinegar with red wine vinegar and just a shake of stevia. Also replaced 1T of mustard with whole grain dijon. Added sliced red onion, grape tomatoes (halved), greek olives and freshly grated black pepper. Slivered almonds and freshly grated parmesan to top at end. - 4/21/13

This was a good salad! The dressing was too sweet & thick for my liking. Next time I will decrease the Splenda & increase the Apple Cider. I added cherry tomatoes, sliced mushrooms, toasted almond slivers, avocado & shredded parmesian cheese. Thanks for sharing, will make again! - 5/16/12

The quantity of dressing was just enough to give all the ingredients a light covering, while still allowing the natural flavor of all the fresh vegetables to come through. I added broccoli, red and green onion, carrot, and celery to the mix. Also, for the dressing I used stevia for a sweetner. - 12/8/10

Great additions! I'll try Stevia next time too! I always add sliced mushrooms, and sometimes top with some fresh, sliced strawberries!
