Berry Burrito Blintzes

5 strawberries(save 1 for garnish) or 1/4 cup blueberries1 packet stevia/splenda1 tbs reduced-fat cream cheese (like Philadelphia)3 tbs fat free/low fat blueberry or strawberry yogurt or plain yogurt with 1 tsp fruit jam1 flour tortilla for burritos (6 inch)1 tsp margarine1 tsp honeyground cinnamon to sprinkle
1.Into a medium bowl, mix sweetener,cinnamon, cream cheese and yogurt until well blended. Gently stir in blueberries or chopped strawberries .
2.For each blintz, place 1 flour tortilla on waxed paper. Spoon the yogurt mixture in center.Fold opposite sides of tortilla over filling, ends meeting in center; fold remaining 2 sides of tortilla over each other.
3. In 12-inch nonstick skillet, melt margarine over medium heat. Cook the blintz , seam side down, about 2 minutes on each side until golden brown. Place blintz, seam side down, on serving platter; drizzle with honey. Sprinkle with powdered sugar; garnish with strawberry slices or few blueberries.
Variation: You could use any fruit you like including canned peaches, cooked apples...
You can also add 1 tbs small-curd 2% reduced-fat cottage cheese to the yogurt mixture.
