13.25 oz Heartland Whole Wheat Rotini3 tbsp olive oil4 cloves garlic, minced1 medium onion, chopped1 large zucchini, diced1/3 cup pepperoncini peppers, chopped2 tbsp chili powder1 14.5 oz can diced tomatoes with chilies, undrained1/2 cup pitted black olives, choppedGrated parmesan cheese (optional)
1. cook the rotini according to package directions
2. In a large skillet, heat oil over med. heat
3. Saute onions and garlic
4. Add zucchini & peppers, cook til tender but crisp
5. add chili powder, tomatoes with diced chilies, and olives. Bring to a boil.
6. reduce heat to low.
7. simmer uncovered 10 minutes, stirring frequently until mixture thickens.
8. Toss rotini with vegetable mixture.
9. sprinkle with parmesan if desired and serve immediately.
