1 12oz package Jimmy Deans Light Sausage6 eggs6 slices reduced fat wheat bread1 1/2 cups Kraft Fat Free Shredded Cheddar Cheese2 cups nonfat milk2 tsp ground mustardCooking Spray
1. Fry sausage in frying pan until brown. Drain meat.
2. Blend eggs, milk and ground mustard in bowl for 1 minute until mixture is well-beaten.
3. Cut bread slices into cubes (about 9 cubes per slice of bread).
4. Add bread, cheese, and sausage to egg mixture and stir until well-mixed.
5. Spray bottom and sides of a 9x13 baking pan with cooking spray. Pour mixture into pan. Cover with plastic wrap and refridgerate, undisturbed, overnight.
6. Preheat oven to 375 degrees Farenheit. Bake mixture at 375 degrees Farenheit for 40-50 minutes, or until knife inserted into center of dish comes out clean. Remove from oven and let sit for five minutes. Cut into 20 slices (four rows, five columns) and serve warm.

I made this and it is alright. Personally, I thought it was a little bland. I will probably make it again but try adding some onions and celery. Something to jazz it up a bit. - 2/23/09

This version is admittedly a little blander than the original my mom makes, simply because this recipe uses lower fat sausage and fat free cheese, which cuts into the taste a little. Onions would be pretty good with this - may have to try it next time I make it! :)

Variations of this recipe abound. At our B&B, I used fat free sharp cheddar as it adds a little more flavor. I use it in my cheese sauces, scalloped potatoes, etc., too. It really helps. Also, Southwestern egg substitute would dimish fat and calories without flavor loss, if you like those flavors - 1/9/10
