Creamy Mushroom & Red Pepper Rice

Ingredients
2 tsp butter1 small red pepper, finely chopped3/4 cup skim milk1 cup long grain white rice1/4 tsp ground black pepper1 can condensed cream of mushroom soup1/2 cup chopped green onions
Directions
In a large skillet over medium heat, melt butter; Add red pepper; Saute, stirring frequently about 4 minutes or until pepper is softened; Add milk, rice, black pepper and 1 1/2 cups water; Bring to a boil, stirring occasionally; Reduce heat, cover and simmer for 15 minutes; Stir in cream of mushroom soup; Cover and cook 6 minutes or until rice has absorbed liquid; Stir in green onions and serve!
