Tofu Lasagna w/ sausage

Ingredients
28oz Large can chrushed tomatosLarge onion3c garlic10 lg mushroomsItalian seasoningBasil.5 block firm tofu drained4 oz mozzarella cheese shredded1 egg2 links Italian Sausage2 to 3 zucchini about 2 cups diced1 lb box whole wheat lasagna noodles
Directions
cook diced onion till translucent add 2 c garlic crushed tomatos and mushrooms. and 3 cups water , 1table Italian seasoning 1 table basil simmer for 20 to 30 min.
Mix tofu, cheese and egg. I use a fork to make sure the tofu is mashed good, Add remaining 1 c garlic crushed set aside
Cook sausage till done in large skillet chopping it good with wood spoon (I don't like big chunks)
add zucchini cook will just tender.
Spray a large ( 13x9) baking pan with oil spray. Ladle on scoop sauce into pan. Lay down noodles (dry, just give then some room to expand)
layer zucchini mix and cheese a scoop or so of sauce then noodles. The sauce will be thin but this allows the noodles to soak up enough to cook.
Cover with tin foil tightly and back for 1 hour when the noodles are done it is ready
