Ingredients
Avocado: 3 firm, but ripe pears, choppedTomato: 1 Firm (meaty not juicy), choppedGarlic: 1 tsp crushed or 2 cloves, mincedOnion: 1/2 cup finely diced or mincedLime: juice of 1 fresh, or tbsp of bottledCilantro: 1/4 cup chopped very fineSalt: 1/4 tspOPTIONAL:Canola Oil: 1/2 tsp orGolden Italian Salad Dressing: 1 tbsp (both @ same calorie& fat content)
Directions
Mix contents together in a glass bowl (preferably).

Chop your avocados up last and mix them in well.

The Lime juice, salt, and oil or salad dressing help to preserve the salad. If you leave out the oil or salad dressing, you also remove 9 calories & 1 g fat per serving. However, if you do so, add more lime juice to help keep the avacados from turning brown from air exposure. If they do begin to turn a bit brown, simply add a splash of lime and mix, and it will brighten again.

Cover the mix tightly with saran (keep it close to the surface of the salad to maintain brightness), refridgerate, and let stand for 1-4 hours .

This is a staple in my fridge through the summer for salads, dipping, and spreading on wraps and sandwiches. Great recipe! I never use the oil or dressing - it's perfect without it! :) - 8/2/09

This sounds exactly like the guacamole that I buy from the grocery store - and it's addictive! Can't wait to try it. - 6/10/08
